"In 2016 Thyge Benned Jensen quit his day job in Copenhagen and bought vineyards with vines between 10 – 100 years in Arribes, Spain, a rural area on the edge of the frontier in every way. Despite a long tradition of winemaking, old vines with low yields and difficult accessibility have led many vignerons to abandon their vineyards and traditions to be lost. But there is a hidden gem in the local grape variety Juan Garcia, an atypical, Spanish grape, due to its very thin skin and propensity to produce low-alcohol wines. Thyge works to re-establish the humus on the floor of the vineyard using cover crops and compost, and by allowing leaves and branches on
the floor of the vinyard once they've fallen or been manually removed. He vinifies handpicked, hand-selected grapes in a 500-year-old granite cave, largely in whole clusters following an intensive manual selection, with no additives and a minimal (or no) addition of sulfur dioxide. For every 6 bottles sold, 1 tree is planted in the Bodega Frontio forest near the vineyards."
