"This darkly fruity beauty is Jean-Yves' house wine. These grapes are hand-harvested from 10-20 year old vines planted to sandy, pebbly soils. The wine is fermented in stainless steel to maintain its freshness, slowly and at lower temperatures. After spending the winter in tank, it is lightly fined, lightly filtered, and lightly sulfured at bottling. The result is a wine made to share and drink ("Vin à Boire" means "Wine to Drink") and is pure pleasure from beginning to end. Beautifully balanced dark summer fruits with a gentle kick of spice play alongside a fresh yet elegant palate. The finish is satin smooth and surprisingly long. How was the cuvée born? In 2000, one of Jean-Yves' father's cuvées threatened to spill out from its tank, so Luc made the decision to pour part of the fermenting juice into another empty tank to lower the level of the full one. This juice finished fermenting on its own. Once finished, a tasting offered a lovely feeling of surprising lightness that was new to the estate. After finishing his glass, Luc exclaimed: “THIS WINE? IT IS TO DRINK!”"
