"This cask strength, single barrel of Canadian whisky available only in New York started as part of a larger blend made up of five distinct components:
22% 21 year old corn whisky
10% 20 year old corn whisky
39% 15 year old corn whisky
7% 8 year old wheat whisky (new oak)
22% 8 year old wheat whisky (ex-bourbon)
Resulting in an overall grain ratio of 71% corn to 29% wheat.
For the cask finish, Found North partnered with the team at Kelvin Cooperage in Kentucky to create a novel American Oak influence. While most cooperages char their casks with infrared heat, Kelvin utilizes wood for fuel. Found North selected four distinct types of wood for this experiment: American Oak, French Oak, Spanish Oak, and Amburana. This particular single cask was a 53 gallon American Oak barrel toasted with chunks of French Oak to a heavy toast and char #1 profile. It was finished in this cask for 4 months before being bottled at a cask strength of 58.3% abv."
