"Talk about traditional: this is a wild field blend of 85% Sangiovese, 5% Colorino, 5% Canaiolo, 5% Ciliegiolo, from vines aged 30+ years, planted at 280 meters altitude. After destemming and soft pressing, the must starts fermentation spontaneously in the presence of the skins. Throughout the course of fermentation, the wine remains in contact with the skins for a period of about 15 days. The separation of the free-run wine from the skins follows. After some decanting, the wine remains in concrete tanks for 5 months, until bottling. All stages of winemaking take place in concrete tanks. In the glass, it is a bright ruby red color, and the nose opens with notes of ripe red fruit, cherry, black cherry and plum jam, backed up by floral hints of rose petals, iris and violet. In the mouth it is intense, with good persistence and softness, with an elegant tannic texture."
