Made with Hakkaisan’s signature snowmelt brewing water, local sake rice and extra amounts of carefully made koji, the result is a luxurious, sweet and ageable beverage fitting as a dessert or a night cap. Traditionally, Kijoshu in Japan have been aged by the brewery and released many years later. Hakkaisan's Kijoshu is fun and unique in that it is unaged. The brewmaster enjoyed the young and fresh expression of this sake so much that he wanted to share it with the public, breaking tradition and leaving his customers to decide whether or not to age it themselves.
