"This is Louis' first blended plot Chablis: a true winemaker's selection of the best parts of each parcel. The vines are planted along the Serein Valley, facing from West to East, and all between 12 and 75 years old on Kimmeridgian and Portlandian slopes. The wine is fermented in stainless, and natural malo is allowed to occur when it wants to. The wine is bottled after a light fining and filtering. Bright, leesy and cheesy, this is what Chablis used to taste like, with a lovely backbone to complement the lovely fruit, ending in a long, lip-smacking finish."
