"Yellow cane, grown in our soils between Marina di Modica and Sampieri, becomes intense in becoming Rum Mater. Precise fermentations (72-96 hours) and control, with oenological yeasts, copper distillation, that seem to succeed in capturing the mood of the terroir where the plants grow: iridescent, layered Mediterranean panorama. There is lemon, flowers, peel and juice; golden apple, olive, oil and brine; fresh thyme, luigia grass. Complex, round, to be discovered with the right slowness: evolution in the glass, "buttery" in the mouth, warm and fresh, deep Sicily."
