"Bright and refreshing, this sake is the perfect choice for daytime drinking and is the brewery employees’ drink of choice. Melon, pear, and banana drive the aromas and combine with a subtle sweet touch highlighted by a subdued acidity in the butter-tinged flavor while the juniper botanicals and cucumber notes make it the perfect gin lover’s sake. It is technically milled to ginjo level but reined in by flavors and aromas to allow more easy drinking.
Try it with grilled Sriracha shrimp, roasted beets, and whole-grain salads.
Takatenjin is an old castle located near Mt. Fuji. They get so much sunshine year-round that they are able to operate as a mostly solar powered brewery. This area of Shizuoka also has the most wasabi farms in Japan and is famous for tea - two delicate products that require flawless water like sake does."
