Mr. and Mrs. Yamada brew this sake in a classic style in the same way their ancestors handcrafted it, continuing deep-rooted traditions. This is a very small producer and their sake in Japanese is called Mukashi No Manma or "unchanged by time". The rice is a local variety and it is milled 55%. The flavors are earthy with a touch of smoke. This sake is nice both cold and gently warmed.
